Satisfying salad supper

Delicious, carb-free salad made in 15 minutes. Read below to make yours. 

The proof of my swift dinner

Just grab spinach, cavolo nero salad leaves, boiled eggs, mixed sprouts: sprouted alfalfa, lentil, quinoa, sango radish & daikon radish (I like Good 4 U Quinoa Sprout Mix which can be bought from the bigger supermarkets), cherry tomatoes.  For extra protein, add chicken or tofu, and sesame seeds.

For the dressing: 4 tablespoons of cold pressed olive oil, half the amount - so 2 tablespoons of apple cider vinegar, 1-2 cloves of crushed garlic, salt, pepper, lemon's juice. Any other herbs you have fresh. 

How to make it?

Chop up all ingredients whilst you are making your hard boiled eggs and fry some chicken on coconut butter/ghee. I prefer the taste and aroma free coconut oil. (chicken might take longer). 

Toss all ingredients and voila! Enjoy!

I certainly did with a glass of red wine which is packed full of antioxidants called resveratrol. Fantastic companion if you had a long day. 

Note: only add the dressing before you eat it otherwise you end up with a soggy salad. Red wine in small amounts is great and has 100 protective compounds called polyphenols. Enjoy responsibly ;-)
